OK I got carried away... Mega Non Meat Chili portion.


As some of you will be aware as I have posted pictures and recipes from time to time. I have a crock pot for cooking a lot of my plant based food dishes and for batch cooking in general.

Today was a beans day as I had loads left in my cupboard and I'm due to do an online shop soon, so decided to clear the cupboard shelves a little.

Today was 3 bean chili day!

Recipe or ingredients list is as follows:

Dried goods:

2 cups of Broth mix (Dried barley, various lentils, Marrow fat peas etc)

2 cups of Dried Red Lentils

1 or 2 Veg Stock cubes

Chili powder

Hot Paprika powder

Turmeric powder

Cayenne Pepper powder

Course Ground Black Pepper

Cumin seeds

Teaspoon chopped garlic

Tinned goods:

2x 400g tins of standard Baked Beans

1x 400g tin of Black Beans

1x 400g tin of Red Kidney Beans

Sauce:

2 x 400g jars of tomato/bolognese sauce

Liquid:

2 pts of water for the dried goods to absorb for several hours before other ingredients go in. You can leave them overnight to soak or cook for a couple of hours on high first before throwing everything else in.

Cooking time:

Cooking time obviously varies subject to your slow cooker. I would suggest cooking the dried stuff first to absorb the liquid and fill out. Then add everything else for another 2-3 hours on high or 4-5 on low. Otherwise cook it all in a big pan (a very big pan!) or a big casserole dish, not too high heat wise.

All the spices etc you add to taste, but always better to put less in too suit all tastes and sprinkle more on top of individual portions when you reheat for your own personal taste to fire it up a little!

I got 9 portions, 8 ready for the freezer and 1 for my tea. Ideal with Brown rice if you want to be a little healthier, or go well with oven wedges as well. I even have it with Wholewheat pasta to be honest.
