Plantpowered tofu teriyaki

I fancied a Chinese/Japanese and had some Tofoo (Tofu) in, and some organic red peppers so with the addition of some Chestnut mushrooms and a ready made stir fry suace of choice I had an easy decision to go with my first Tofu Teriyaki.


Anyone who has used Tofu in cooking will know that it works best when crisped up in the oven or stir fried. In this case the stir fry gave it a good texture and helped it really absorb the flavours, and when the teriyaki stir fry sauce was added it came out really well, literally searing the tofu to it's limit made it all the more tasty.


If you want to make it for yourself, then this is what I used, and how I prepared and cooked it.....


Ingredients:

1 x Block of Tofu (in my case it was Tofoo)

1 x 300 or 500g pack of Chestnut mushrooms

2 x Red peppers

1 x Teaspoon of lazy garlic

1 x Teaspoon of sesame seeds

1 x sachet of Blue Dragon Teriyaki sauce

You will need to serve it with a white rice of your choice, or brown rice if you prefer, or traditionally with noodles. If you go the noodles route then use a larger portion of sauce to help cover some of the noodles too.


I stir fried my dish, I chopped the red peppers into long strips or big chunks and cut the mushrooms into halves to ensure large chunks of texture to the dish.








I cut the Tofu into long, big strips to simulate chicken strips and to help it absorb flavours. Having the heat high to fry the pepper and mushrooms at the same time as the tofu is helpful, and once all seems crisp and cooked enough, then add the Sesame seeds and garlic and 5 mins later turn the heat down to medium and add the Teriyaki sauce. I used Blue Dragon Sticky Teriyaki in sachet form and only needed one for the above amount of ingredients, which serves three adults or makes two large sized portions.


Once the teriyaki sauce has coated everything and crisped up, the dish is good to go with whatever side dish you want, rice or noodles etc. I just had the whole serving of the Tofu Teriyaki as I was hungry, and no side or accompaniment.


The key is in getting all the ingredients adequately crisped up and the Teriyaki sauce to stick nicely to all the ingredients.
