When life gives you soup, turn it into casserole!

So yet again I've turned out another plant based casserole/meal and surprise surprise it's got veggie/vegan sausages in it!...

I had a packet of Asda Vegetable soup mix to use up which I was going to make in a pan, and then I figured why not stick it in the slow cooker and add a few more things in....

This is what went in, in order:

1 x Asda 500g vegetable soup mix

1 x Sweet potato chopped

1 x 1.5 pints of hot water

1 x Veg stock cube

1 x Half cup of brown rice

1 x Large Red pepper chopped

1 x 400g tin of Black beans

1 x Handful of mushrooms (whole)

1 x Teaspoon of Cayenne pepper

1 x Teaspoon of Chili powder

2 x Teaspoon of Turmeric

1 x Teaspoon of Black pepper...

After the initial 3 hours to allow some of the water to be absorbed by the sweet potato and rice I added..

1 x 6 Vegetarian/Vegan sausages chopped (Linda McCartney Rosemary and Red onion)

1 x 500ml of Tomato passata

1 x Veg stock cube (again)

1 x 400g tin of Baked beans

1 x Half bag of spinach leaves.

Another couple of hours in the slow cooker and it was good to go to be portioned up for the freezer.

As a side note I will add that the sausage casseroles I've made so far have gone really well with side portions of brown rice or flavoured rice, and a large dollop of Hummus!
