So as always I pretty much made this up as I went along, going with vegetables I liked and vegetables I knew would go well together.
Here's what I used to get 8 portions......
Tinned goods:
1 x 400g tin of drained black beans
1 x 400g tin of drained red kidney beans
1 x 400g tin of drained chick peas
The tinned goods were put in first in the bottom of the slow cooker so they cook thoroughly.
Fresh vegetables:
5 chopped vine tomatoes
2 large sliced carrots
1 large chopped white onion
1 large chopped green pepper
1 pack of fresh mange tout
1 pack of whole white mushrooms
5 chopped spring onions
The fresh vegetables were put straight on top of the tinned goods right from the start of cooking.
Herbs & spices etc:
2 vegetable stock cubes
Salt & pepper to suit
2 teaspoons of paprika
2 teaspoons of turmeric
2 teaspoons of lazy garlic from a jar
1 pint of hot water to mix with all of the above and pour over all the other ingredients.
Halfway through cooking I added half a bag of baby spinach and mixed it in.
Finally 5 minutes from the end I sprinkled in vegetable gravy granules to thicken the liquid to suit the consistency I required.
Serve with salad potatoes or sweet potatoes, or portion up into food containers and allow to cool and put in the freezer. Reheat with a mere 3-4 minutes in a microwave after defrosting.
