Latest recipe : #Plantpowered and vegan bolognese

So I realized a while back that since I went plant based over 30 months ago, that I had not had one of my regular favourites prior to ditching meat & dairy. So here is my 1st attempt at spaghetti bolognese (or bolognese, as I'm using spaghetti from a packet).....

The below amounts will make roughly 6-8 adult portions.

Stage one ingredients:

500g of dried Red Lentils

1 Pint of hot water

1 x Veg stock cube

5-6 Teaspoons of dried mixed herbs to suit your taste

2 x Teaspoons of 'Lazy Garlic' or freshly chopped garlic to suit your preferences to strength

Cook all the above until the lentils seem to of absorbed a reasonable amount of the water and then add...

1 x 690g jar of Tomato Passata sauce.

Whilst the above is still simmering fry up the following and add to the dish..

1 x 300g of Chopped White Mushrooms

2 x Chopped White Onions

While frying the above, chop some tomatoes and add to main dish..

6 x Chopped Salad Tomatoes or Vine Tomatoes

Continue to cook until you feel the lentils are cooked until very soft, add small amounts of hot water if more required until you have the right overall consistency, or feel free to add vegan gravy granules to add extra flavour and thickness if required.

Cook your spaghetti and drain and you are ready to go!!
