Chili time again! ....as I've had a few weeks of curries and bolognese, it was time for some more beans to get that vital healthy plant protein in.
I threw a bit of Paprika in this time and extra garlic so it seemed to have a bit of a unique taste and smell this time round and I can only put it down to the Paprika.
This is the ingredient breakdown as I put them in, and they all went in at the start so no need to go back to the dish as it cooked other than the odd stir to check on it. It took 6 hours in the slow cooker on high.
Ingredients used:
1 x 400g tin of Black beans (drained)
1 x 400g tin of Butter beans (drained)
1 x 400g tin of Chopped tomatoes
2 x 400g tins of Red kidney beans in chili sauce
(You can use just drained Red kidney beans)
2 x 400g tins of Baked beans
6 x Chopped Salad tomatoes
3 x Chopped Bell peppers
3 x Chopped chili's
1 x 360g pack of White button mushrooms
1 x Half bag of Baby spinach.
Spices etc used:
1 x teaspoon of Paprika
1 x teaspoon of Cayenne pepper
1 x teaspoon of Chili powder
1 x teaspoon Black pepper
2 x teaspoons of Lazy Garlic from a jar
2 x Vegetable stock cubes
1 x pint of hot water
It took 6 hours in a Crockpot slow cooker on high, and I got 9 adult size portions out of the above quantities.
Serve with Rice or if you are weird like me Salad potatoes or Sweet potato.
