Total fluke result on this recipe for me as per usual, as I tend to start with a base mix and add stuff I like and hope for the best...
This all started with a 500g Asda Potato & Leek soup mix! and ended up tasting like a non meat mulligatawny soup only better than the meat version.
Ingredient list to make 3-4 portions:
500g total of chopped leeks, chopped potato and chopped onion (Or a bag of pre made fresh potato & leek soup mix from Asda or the likes. (It's basically a bag of chopped product and you add water and any stock or flavourings etc).
Half a teacup of dried barley
Half a teacup of sultanas
One teaspoon of curry powder
Half a teaspoon of Turmeric
Half a teaspoon of Ground black pepper
Half a teaspoon of Garlic salt
One and a half pints of hot water with one veg stock cube
Onion gravy granules to suit (This is effectively a thickener and flavour enhancer)
Instructions:
Add all ingredients together except the onion gravy granules.
Bring to boil then straight to simmer on it's lowest setting. This will soften the leak and potato ingredients and then allow for the dried barley to slowly absorb the veg stock and bulk up the soups consistency.
Stir occasionally and once the barley has bulked up in size add several teaspoons of onion gravy granules until you get a thick enough consistency to consider it a hearty/thick soup.
Remove from heat and leave for 5 minutes while the gravy granules thicken the soup whilst cooling.
That's it, add a dollop of houmous if you have any to individual portions and a bit of course ground black pepper.
